HOW TO CHOOSE THE PERFECT WEDDING CAKE/CAKE DESIGNER

As there are so many choices around now for styles & fillings of cake, you can become somewhat perplexed and undecided.  Should you choose traditional or go for something contemporary? Which filling would be best for a specific design?......and the list goes on.

We are compiling lots of tips and advice which should help when choosing the perfect cake and designer for your wedding.

TIPS SUPPLIED BY HOLLY LODGE CAKES - www.hollylodgecakes.co.uk

1.  One of the most important things to remember when ordering a cake is try to give the cake decorator at least 3-6 months notice.  Mainly due to the fact that we can get booked up early, but also to remember that if you wish for fruit cake these are made well in advance to give them time to mature.

2.  Don't think you have to have a simple white or ivory cake.  We can design cakes to co-ordinate with your wedding colours.  They don't  have to be tiered.  Imagination is the key, it is often fun to incorporate yourselves into the cake, so even novelty designs are fun e.g. hobbies or your profession. Don't be afraid to ask, most things can be achieved!!

QUESTIONS & ANSWERS SUPPLIED BY SERENDIPITY CAKES - www.serendipitycakes.co.uk

Q - I’ve often been told that you have to have the base of a tiered wedding cake as fruit cake, due to the weight.  We only wanted the top tier as a fruit cake and the remaining three tiers as chocolate cake.  Is this possible?

A - Yes, this is possible, however, as with any tiered cake, it is imperative that each tier has special cake dowels inserted into them, thus ensuring complete strength and stability on assembling.

Q - We want to serve our wedding cake as a dessert, but it must have the wow factor, I don’t want anything traditional and am willing to consider anything alternative, have you any suggestions?

A - If you really want to wow your guests, why not consider a wopping 3 foot tower of meringues! Serendipity Cakes was recently assigned to create this, which was served with fresh berries and a raspberry couli.  As an alternative, you could use profiteroles instead, which is known as the French Croquembouche.  This could be served with fresh cream and a warm Belgian chocolate ganache.

Q - My aunt would like to make the wedding cake, but would like it to be decorated by a professional.  Is this possible?

A - Yes, this is possible.   However, it is essential that the cakes are made in 3 or 4” high cake tins, ensuring the cake is straight and conforms to the tier sizes you will need for the cake design you have chosen.  This doesn’t always make an enormous difference in the price of the cake, as the majority of work goes into the covering and finishing detail.

Q - My fiancé and I can’t agree on what flavour wedding cake to have.  I would like a vanilla filling and he wants a fruit cake.  Is it possible to have more than one filling?

A - With so many flavours available, it is indeed difficult to choose.  However, it is possible for each tier of the cake to be made of a different filling.  For example, I often do a 3 tier wedding cake with individual fillings, such as carrot cake, vanilla and fruit cake, ensuring everybody is satisfied.
